Today is National Fluffernutter Day!

Today is National Fluffernutter Day!

One of my neighbors mom's gave me the nickname Fluffernutter when I was probably 5 or 6.  We grew up in a friendly neighborhood where we would ride bikes, play at each other's houses without out making formal playdates.  One of my favorite things would be riding my bike down to the lumber yard (if you know me and have heard me speak, I would love you to leave a comment on how exactly I would say that place) at the end of the street and use my change to buy gumballs from the old gumball machines. 

Every time I ate at a certain neighbors house she would all make us lunch and I would always ask for a Fluffernutter.  It was shortly before we moved, that I ran into the neighbor's mom at Dunkin Donuts (big surprise huh?) and she saw me and yelled, "Lynn, my Fluffernutter how are you?"  That made me think back to that awesome little neighborhood when times were much more innocent, Creature Double Feature on Channel 56.

Anyway, I think I will be making myself a yummy Fluffernutter for lunch.  I wonder if Miss V will want one too.  But her favorite version is with Dark Chocolate Dreams Peanut Butter.

Fluffernutter sandwiches require bread plus two fillings: peanut butter and marshmallow creme (I am a Fluff purist, it must be Fluff not marshmallow creme) Peanut butter was invented in 1890 but not mainstreamed in America until 1908 (see the history of peanut butter).


Marshmallow, on the other hand, dates back to ancient Egypt, and marshmallow sauces were popular in the early 20th century (see marshmallow history). A marshmallow creme called Marshmallow Fluff was sold to ice cream parlors in 1910 by the Limpert Brothers, and Snowflake Marshmallow Creme was available around 1914. The first commercially successful, shelf-stable marshmallow creme, it was produced by the Curtis Marshmallow Factory of Melrose, Massachusetts.
Marshmallow Fluff wasn’t the first marshmallow creme, but it’s the one that endured: 94 years later, the brand is still around. No one remembers the Limperts or the Curtises.

Ways To Celebrate National Fluffernutter Day


Classic Fluffernutter Sandwich. The basic is creamy peanut butter and Marshmallow Fluff on white bread. We like to substitute whole wheat bread for the white bread, chunky peanut butter for added crunch and half of a sliced banana or caramelized banana slices.

Strawberry Fluffernutter. Use Strawberry Marshmallow Fluff or add strawberry jam and/or sliced fresh strawberries. (You heard it here first!)

Mock Fluffernutter Sandwich. Another NIBBLE creation: If you’ve got marshmallows but no marshmallow creme, slice them (or use miniature marshmallows) and lay them atop the peanut butter.

Toasted Fluffernutter Sandwich. Still another NIBBLE recipe: Toss the sandwich under the broiler (open face) for a gooey, toasty effect, using either marshmallow creme or sliced or miniature marshmallows. You can buy toasted marshmallow creme from Solo.

Cookies, Cake, Muffins. Top peanut butter cookies, cakes, cupcakes or muffins with Marshmallow Fluff. Alternatives: Make PB and Fluff cookie sandwiches; use Fluff as the filling in a peanut butter cake; use a pastry bag to inject Fluff into a cupcake or muffin.

Milk Shake. Make a Fluffernutter Shake: Add two tablespoons of creamy peanut butter and two large spoonfuls of Marshmallow Fluff into a blender, along with a cup of milk. Blend 30 seconds or until smooth.

National Zucchini Bread Day

So yesterday was National Zucchini Bread day and I was going to make a loaf after I dropped off Miss V at school.  Well I got a little side tracked by some wonderful moms.

When we got home yesterday afternoon, I pulled out the Food Network Magazine from May 2011 that had a Mix & Match Quick bread section.

Step One
Choose a flavor - One cup Zucchini, shredded and squeezed dry.

Step Two - Mix-ins (choose up to 1 3/4 cups but no more than 3/4 cups of nuts) I chose one cup of rolled oats and 3/4 cup toasted chopped walnuts.

Step Three - Preheat oven to 350 and lightly butter one 9x5 inch loaf pan or three 6x3 mini pans.

Step Four- Mix 1 3/4 cup flour, 3/4 cup sugar, 1 tsp baking powder and salt, 1/2 tsp baking soda, cinnamon and nutmeg in a large bowl.  Add in the mix-ins from step two.  In a medium bowl whisk 2 eggs 1/2 cup cooled melted butter or vegetable oil, 1/2 cup plain yogurt or sour cream, 1 tsp vanilla extract and 1 tsp citrus zest (optional).  Stir your fruit or vegetables into the egg mixture, then fold into the dry mixture until just combined.

Step Five - Spread the batter into the pan.  Bake until a toothpick inserted comes out clean, about 55 minutes for a standard loaf or 35-40 minutes for the mini loaves.  Cool 30 minutes in the pan on a rack, then turn out onto the rack to cool completely.

Step Six- Make a glaze.  I chose Cream Cheese.  Whisk 1 cup confectioners sugar, 3tbs softened cream cheese, 2 tbs milk and 1/4 tsp vanilla extract.






It came out really tasty!!!

S'mores Sandwich Bar Cookies for National S'mores day!

Happy National S'Mores Day!!

Today is National S'Mores Day and also National Banana Split Day, so of course we need to celebrate, right? (shake your head yes.....)
I found a good looking recipe on the Hershey's website for S'mores Sandwich Bar Cookies.
Ingredients:

1/2 cup (1 stick) butter or margarine, softened
3/4 cup sugar
1 egg
1 teaspoon vanilla extract
1-1/3 cups all-purpose flour
3/4 cup graham cracker crumbs
1 teaspoon baking powder
1/4 teaspoon salt
5 HERSHEY'S Milk Chocolate Bars (1.55 oz. each), unwrapped
3 cups miniature marshmallows
Directions:
1. Heat oven to 350°F. Grease 8-inch square baking pan.
2. Beat butter and sugar until well blended in large bowl. Add egg and vanilla; beat well. Stir together flour, graham cracker crumbs, baking powder and salt; add to butter mixture, beating until blended. Press half of dough in prepared pan. Bake 15 minutes.
3. Arrange unwrapped chocolate bars over baked layer, breaking as needed to fit. Sprinkle with marshmallows; scatter bits of remaining dough over marshmallows, forming top layer. Bake 10 to 15 minutes or just until lightly browned. Cool completely in pan on wire rack. Cut into bars. 16 bars.

National Truffle Day!

In honor of National Truffle Day, Miss V (aka Master Chef Victoria) and I made truffles this evening.  I found the recipe earlier in her YCA Binder.

Chocolate Covered Truffles

10 oz semi sweet chocolate squares, divided
4 oz cream cheese, softened
Garnish:  Sprinkles or chopped nuts

Melt 4 oz chocolate squares in the microwave for 1 minute.  Stir and then heat for another 30 seconds.  Stir until completely melted.

Beat cream cheese with an electric mixer until creamy.  Stir in melted chocolate and combine until smooth.

Place the mixture into an 8x8 baking pan and chill in the freezer for 10 minutes.

Shape into 1 inch balls with a small cookie scoop;  place on wax paper and chill in the freezer for another 15 to 20 minutes.

Melt 6 oz chocolate squares in the microwave as directed in the 1st step.  Using a fork, dip each ball into the chocolate to coat and place on wax paper to set.

Garnish with sprinkles or chopped nuts if desired.  Makes 16 truffles.

National Filet Mignon Day

Have you ever seen the show called The Best Thing I ever ate on Food Network? It is where they ask the Food Network hosts where they ate the best food item. Well today is National Filet Mignon Day! No we are not having Filet Mignon tonight.

But the best place I ever ate a Filet Mignon, would be Memphis Roadhouse in South Attleboro, MA. I loved the 8 oz Filet with skillet potatoes and a cesar salad. Yum! Last summer we had to eat there on vacation. I was bummed that they didn't offer the skillet pototatoes, instead got broccoli.


My mouth is watering just thinking of Memphis Roadhouse.

National Pecan Pie Day

Today is National Pecan Pie Day, and I am skipping it. I only enjoy Pecan Pie at Thanksgiving time. I posted a great Chocolate Pecan Pie back in November 2008.

Blueberry Muffins

In honor of National Blueberry Muffin day, we had Breakfast for Dinner! Of course I had to make some blueberry muffins.

2 cups flour
2 tsp baking powder
1/4 tsp kosher salt
1 stick of unsalted butter, softened
1 cup sugar
2 eggs
1/2 cup whole milk
1 tsp vanilla extract
1 cup frozen blueberries, thawed

Topping
1 tbs sugar
1/4 tsp fresh ground nutmeg

In a large bowl, combine flour, baking powder, and salt.
In a mixing bowl cream butter and sugar until light and fluffy. Add eggs one at a time and blend well after each one. Add milk and vanilla.
Stir in you dry ingredients just until moist. Do not over mix!!
Fold in blueberries.
Fill greased muffin cups 2/3rds full.
Combine sugar and nutmeg and sprinkle it over the muffin batter.
Bake on 375 for 20 to 25 minutes. Cool in the pan for 10 minutes then move them to a wire rack.
