When I am feeling short on time, I love making Chocolate Chip Cookie Bars. This is one of my favorite recipes.
2 1/4 cup flour
1 tsp baking soda
1/2 salt
1 cup coconut oil
3/4 cup granulated sugar
3/4 cup light brown sugar
1 tsp vanilla extract
2 eggs, room temp (put them in a bowl of warm water for about 5-10 minutes)
1 bag semi-sweet chocolate chips
Preheat oven to 375.
Spray a 15 1/2 x 10 1/2 glass baking dish with cooking spray.
Sift together the first 3 ingredients.
Cream the coconut oik and sugars until light and fluffy.
Add in one egg at a time until fully incorporated and add vanilla.
Mix in the dry ingredients and gently add the chocolate chips.
Press dough into the greased pan.
Bake for 20 minutes and it will be golden brown. Do not overbake, you want these to be crisp on the outside and soft on the inside.

Emeril's Kicked-Up Sandwiches
Well, I bought my first e-book yesterday. You are probably wondering why I am talking about it here. Well this is what I bought.
I am always borrowing Miss V's iPad to look up recipes in the kitchen instead of dragging out my laptop. I quickly peeked through the book before church and found a few that I can't wait to try.
Do you have any cookbooks on your e-reader/iPad? If so what books do you have and how do you like looking at those instead of an actual book??

Taste of Home - Ultimate Halloween 2011
I picked this up the other day at Sweetbay. The caramel apples on the cover pushed me over the edge. Anyway there are lots of yummy looking recipes and not just for Halloween, but also a lot of "fall" recipes. Hey I might even make a turkey meatloaf and different kinds of chex mixes.

Taste of Home Southwest
While wasting time this morning at Walmart, I was going through the magazine section and noticed a new Taste of Home magazine. I had to pick it up!!! Oh it looks like it has absolutely wonderful recipes and I can't wait start trying them.

Yesterday at Books A Million, I picked up Bobby Flay's Burgers, Fries, and Shakes. It looks wonderful and I can't wait to try some new recipes and I am so tempted to get a small fryer.

Taste of Home Chicken Cookbook 2010
This is the magazine that I have referenced a couple times lately. On the cover it says to display until May 24, 2010 just in case anyone one wanted to buy it. I think I got it at Walmart or Books A Million. You can also buy it right on the Taste of Home website.

New Cookbooks!
Marcel and Victoria bought me new cookbooks for Christmas. The first one I opened was Sandra Lee's Cocktail Time, oh boy does it have some great recipes and I can't wait to try some out.
The second one is Back to Basics by Ina Garten and I have been wanting this one since it came out.

The last one, Victoria picked out all by herself. It is Emeril's 20-40-60. I looked through it and it also has some great recipes.

Best Loved Cookies & Bars, OH MY!
I picked up Taste of Home Best Loved Cookies & Bars last week at Sweetbay. I absolutely love their special issues. I now have lots and lots of ideas for my holiday baking and can't wait to try some new recipes.

Land O Lakes - Harvest Baking
I just picked up the new issue of Land O Lakes - Harvest Baking magazine. It has some really great recipes for the fall and some super cute ideas for Halloween parties or Harvest Parties. Some of the recipes even the kids can do. So if you have a child that likes cooking or decorating pick it up!
Look how cute those leave cookies are?! Those jack o lantern cupcakes are really easy to make and I think they will be on the menu for Victoria's Halloween party.
