Lime Sugar Cookies

I had a few limes that needed to be used up so Miss V and I came up with Lime Sugar Cookies.  They are sweet but also tart.

2 1/2 cups all purpose flour
1 cup granulated sugar
1 tsp vanilla
1 large egg
2 tbs fresh lime juice
zest of 2 or 3 limes
3/4 tsp salt
1/2 tsp baking soda
1/2 cup unsalted butter
1/2 cup shortening

Sugar Mixture
1/3 cup granulated sugar
zest of 2 limes

Preheat oven to 350.

Sift the dry ingredients (except sugar) together.

Cream butter, shortening and sugar until light and fluffy.

Add egg, vanilla, lime juice and zest. 

Slowly incorporate your dry ingredients.

Use a medium cookie scoop and shape rounded scoops of dough; roll dough in the sugar mixture.  Place 2 inches apart on an ungreased cookie sheet.  Flatten with the bottom of a glass until about 1 1/2 inch circles.

Bake for 10 - 12 minutes or until lightly browned, do not over bake.

Let cool on cookie sheet for 2 minutes then move to a wire rack to cool completely.

You can see the pretty bits of lime zest.

These came out soft, chewy and tart....oh so good!!
