Oatmeal Raisin Cookies

So a sweet woman at church asked if I could make oatmeal cookies for the English Tea Bake Sale.  Sure!  I plan on making a few different varieties based on this recipe.

Sift the dry ingredients and set aside.
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 tsp ground cinnamon

Mix ins
3 cups oats (not instant)
1 1/2 cups raisins

1/2 cup unsalted butter, softened
1/2 cup coconut oil
1 cup sugar
1 cup brown sugar, firmly packed
2 large eggs
2 teaspoons vanilla

Preheat oven to 350°.

Cream the butter, coconut oil until light and fluffy.

Add one egg at a time and fully incorporate then add vanilla.

Add the flour mixture into the wet ingredients.

Gently add the Mix ins.

Use a cookie scoop to portion out the cookie dough. Leave them 2-inches apart onto parchment lined baking sheet.

Bake 11-13 minutes, until golden.  Do not over bake!

Remove from oven; let cookies sit on baking sheet for 2 minutes before transferring to a wire rack to cool.
