Pumpkin Pecan Waffles

2 cups unbleached all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/4 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground nutmeg
1/2 teaspoon ground clove
3 eggs
1 cup cooked and mashed pumpkin or canned pumpkin puree
1/2 cup vegetable oil
1 1/2 cups milk
1/4 cup brown sugar
1/2 cup chopped pecans

Into a large mixing bowl, sift the flour, baking powder, salt, cinnamon, ginger, cloves and nutmeg.

In a separate bowl, beat together the eggs, milk, pumpkin, brown sugar, and oil.

Stir the pumpkin mixture into the dry ingredients and mix well. Stir in the nuts. Spread a 1/3 cup or so of batter onto the waffle iron and bake until done, usually 3 to 5 minutes, depending on the iron. Serve immediately.
